Macos 27: Honeycrisp
Watchos 27: Orchid
VISIOS 27: Eclipse
Tvos 27: Lotus

Often, the names of the technical code refer to something about the product or have a symbolic meaning (the name in iOS code 26 was Solarium, which spoke directly to its liquid glass interface).
